Hello Hungry Friends, All the delicious parts of a quiche and NO CRUST. This spinach, sweet potatoes, and feta bake is the ultimate dish. It's quick, it can be an excellent sliced treat for picnics and barbeques, a quick after school snack, or even a whole meal with a salad on the side. It's so diverse and you don't have to feel guilty with this healthier version with no doughy crust. .................................. Spinach, sweet potatoes, and feta bake Preparation time 20 mins Cooking time 25 mins Serves 6 Ingredients 350g peeled sweet potatoes 230g spinach 250ml double cream 120g feta 4 large eggs 1 tbsp thyme ½ tsp black pepper 1 tsp salt 1 tbsp olive oil 25g pine nuts Preparation 1. Preheat the oven to 190 C / 375 F/ 170 Fan / Gas mark 5. 2. Cut the sweet potatoes into ½ inch pieces. Oil the 25 cm baking tray and bake for 15 minutes, then let them cool. 3. While the potatoes are baking, cook the spinach for a couple of minutes, until wilted. Remove any excess liquid, season and leave to cool. 4. Whisk the eggs, add the double cream, black pepper, and thyme. 5. Spread the spinach over the sweet potatoes, add the crumbled feta and pour the egg mixture over everything. 6. Scatter with pine nuts and bake at 190 C / 375 F/ 170 Fan / Gas mark 5 / for 20-25 mins until the bake is puffy and golden.
